Fitzgeralds Woodlands House Hotel & Spa, a founding member of Original Irish Hotels, has evolved significantly since its humble beginnings over 40 years ago. Originally a modest four-bedroom B&B established by Mary and Dick Fitzgerald to supplement their farming income, it has grown into an award-winning, four-star hotel with 89 rooms and over 200 staff.
Timmy Macs Bistro, one of Adare’s finest restaurants, is known for a menu of locally sourced, seasonal ingredients, many from the hotel’s own organic farm and Mary’s Organic Garden. But the restaurant faced a real problem: excessive sound reverberation near the open-plan kitchen, creating an unpleasant dining experience at busy times.
Mary Fitzgerald wanted a refurbishment that would solve the acoustic issue while bringing the beauty of the hotel’s gardens and grounds inside — an opportunity to create a striking wall feature that reflected the natural essence of the surroundings. Following a recommendation from lead interior designers Tailor & Wolf, the client selected a 7-metre wall for the installation, envisioning a centrepiece of tree bark and moss echoing the hotel’s lush greenery. Working with Freund, the design was brought to life using Greenwood Moss Extra Plus and Rusticork Bark.
Greenwood Moss, from the Moss Design Elements range, is crafted from real, low-grown forest moss, creating a calming, natural focal point in flat or undulating designs. It’s completely maintenance-free, needing no light, watering or feeding provided humidity stays between 40–60%, and can be customised in standard or bespoke shapes and sizes. Rusticork Bark, prized for its lightweight, easy installation and raw, organic character in tones from light to dark brown, added striking contrast against the moss while helping absorb sound and regulate the indoor climate.
The finished feature wall has become a stunning focal point at Timmy Macs Bistro, drawing visitors from near and far, transforming the restaurant into a talking point, and significantly improving the acoustics that had previously plagued the space. Mary Fitzgerald is thrilled with a addition that is both beautiful and functional, bringing the tranquillity of nature indoors.
